Just launched the game for the first time in months after reading your post.
I was able to assign my G29(functionally the same as G920) and using Automatic, I can use my right paddle to shift up and left paddle to shift down. I don't have to hold.

Gearbox: Automatic
[Controller settings]
Controller type: Keyboard + Logitech G HUB G29 Driving Force Racing Wheel
Controller Subtype: Dropdown > Wheel
Gearbox: Automatic
"Use H-shifter for Automatic Gearbox" is disabled/RED X
If you want to use the G-force shifter for forward/reverse, green checkmark, assign a gear to forward(3rd) and a gear to reverse(4th). I prefer this in ETS2/ATS, but not in STDS. If you do enable this, unassign the below buttons. If you don't enable this, assign the below buttons. They conflict with each other, both in this game and ETS2/ATS.

Shift up: Right Paddle
Shift down: Left Paddle
This should function correctly. Keep in mind that the game will not let you just slam it into reverse while going forward and can't go into forward while still reversing. You have to come to a neutral speed first. [which is why I prefer to use the H-shifter, cause you can just drop it into the other gear and as soon as you reach 0 it changes]
