Is the night mode recommended for the first run?
I like this night mode idea, but it is also confusing as I have no idea if it is on the intended difficulty. I like soul-likes very much and challenging playthrough, but I still find the night mode way too challenging for my first run. Will I miss any important collectibles or break some npc quests? Please share your idea on the night mode.

I'd say the regular mode is the intended one. Any challenge modes usually mean worse balance. Needing to for OP builds etc.

Not sure about different/new loot tho.
From what I've seen Night Mode seems to be more of a endgame/NG+ mode. Enemies are massive bullet sponges in Night Mode.
It ramps up enemy health and damage pretty significantly, feels like a little over double the health.
Is the night mode recommended

How would we know what is or isn't "intended" for you?

Play the game, judge by yourself. You can switch those options whenever.

Well it is kinda complicated to say because, unlike former games, Mortal Shell II is way too open-world. Let's say, in my night mode experience right before asking this question, a very common creep takes me 7 hits to kill while 4 or 5 are spawned altogether. It is so hard for me to tell if I entered a over-leveled region or such difficulty is intended. So far I regularly feel either over-leveled or under-leveled, randomly based on my route, which makes the judgement really complicated whether I should activate the night mode.
