With that said I would recommend GP 24 right now for the more exciting physics, if it wasn't for the heavy and dull oversteer behaviour in Ride 5 and quite simplistic brakes I would have a hard time to recommend one over the other. But because of this understeer I have to give over the crown to GP 2. Do still get Ride 5 on a sale when you can because there is some great fun to be had there for sure and if you are new to these games that game might be more forgiving and enjoyable for a beginner. It's just that the game with that understeer lack tracks to race with on the bigger bikes. You end up rolling and braking through the whole track to compensate for this ridiculous understeer that you can't get rid of no matter how you tune the bike in setup. And that lead to you barely getting to hear the engines, you don't get to shift up much before you brake and turn again. All this kills the experience since we are limited with what we feel on a controller and I enjoy being a bit active as a gamer when I play.
I am streaming quite a lot of MotoGP 24 at the moment so take a look there to get a better opinion.

If you are MotoGP fan and follow the events => MotoGP24
If you just want a bike game with loads of content like Gran Turismo => buy Ride4 on discount
If you are a bike enthusiast => buy both.
If you have a lot of disposable income buy MotoGP24 + Ride4 and Ride5
More like RBR for bikes, because you need to spend a week modding it and tweaking the settings before you get to ride and in the end it just looks like something from the PS2 era.
Not saying it's bad but considering I can never get the same level of simulation in a bike game due to lack of peripherals & sim hardware (compared to my rally & circuit cockpit), I much prefer the trade-off of having superb visuals and sounds instead + faaaar less bugs and performance issues.
As for R4vsR5...Ride4 has twice the playerbase of Ride5 and it's for a reason.
And that reason is not because R4 is easier. In R5 you can go through grass in a lean with throttle and the rear doesn't even slide. It's full on arcade.
Not sure what you mean by sorted out but bikes still can't spin the rear tire, do a highside or lock the brakes even with 0 assist and 0 electronics. You also can't even modulated the clutch & you don't need to modulate the throttle & brakes too. Bikes in TT feel like they are on rails and 100% of the difficulty comes from memorizing the tracks and not actually riding the bike. Compared to Ride or MotoGP it literally feels like a mobile game with a sophisticated version of "timed events" where you just need to press buttons at the right time to make it around the track. Switching from keyboard to controller makes pretty much no difference and that says it all. I passionately dislike this game and apologize if I'm too critical to something you like but as long as we are realistic that the physics are 100% arcade I'm happy you are enjoying it. I just wouldn't put it in the same class with any of the Milestone games, even with all their flaws in mind.
or none of them, get yourself a real bike
Totally depends. If you find the physics and gameplay loop of TT absolute dog water like me -> MotoGP24
If TT clicks with you and have fun -> it has a lot of "open world" content. You can even just ride the openworld map for fun and the map is not small at all. You have a lot of routes to chose from.
MotoGP24 is not "light" on content either.
You have Moto3, Moto2, MotoGP and soon to be added MotoE bikes and teams.
You have ~25 very well details tracks to chose from as well.
