generally, you can open the corner hints by options. it shows you Brake, Apex and Ext, help you understand corners and lines, also you can play GP academy mode, that's an easier way to learn above
after you get very skilled for a specific circuit---knowing every corner, the angle of turning in, the timing of graping/loosing brake and how hard it should be, the speed of Ext, then you push hard to the limit, see how fast you can ride for a single lap and whether you can reach GP riders record.
there are some tips for you to maybe make it easy to play:
1. Open corner hint, no race line, there are trace on the track that you can clearly see the correct path/line.
2. Front Brake at the red dot, you can fully grab it at first then you need to loose a bit when your bike slowing down
3. hold the brake on before you prepare to pass apex( trail brake), while braking you should shift down to 2nd gear (most of corners except U-turn can be passed by 2nd gear) or a proper gear
4. lean to a side, when you lean you might lean too much or less, then get off the line. use rear brake you can slightly correct your line, use front brake to do that more effectively.
5. when you pass the apex, try to loose brake and trigger throttle slowly.
6. Shifting pace,as someone like to shift down and brake violently, sliding their rear tire to a side, some will do it gradually, it depends on the style of riding
7. Set your bike up. because I play this game in first person/helmet view, bikes are quite tricky too handle, like rowing a boat. then I tried setting the bike with more steady handling options, that works good to me.
you probably get into the same corner in different speed and angle, and laps after laps the tires are worn too bad already, that's why every lap it fked up the corner.
those are just some simple tips, you will get your own style once you get advanced.
when begin playing this game, i fell off from the bike thousands times. while in multi game, others can do 1m40s a lap in Mugello, it took me 2m30s+ and kick me out of finishing race.
I play TTIOM2&3 Ride1&4&5, only TT2 and GP24 get me such persistent on those circuits.

Physics is OK though.
It took me almost 40 hours to master with helmet sight the Ride games and about 20 more the MotoGP ones, it's a matter of practice, and from where I see it I have never felt what you mention about braking more in one corner and braking less in the next...
You refer to yourself as certainly not a PRO level, yet it only takes 40-60 hours to master these games. Well I'll be damned.
good to know someone playing this game with helmet view, most of them who claim himself a "pro" play with third person view.
