There are several upgrades for the dash;
a) one gives an exit dash stab attack, this will knock back smaller enemies and if they hit walls they can take further damage, also can knock enemies into gaps. Also, this takes about half your stamina bar.
b) one gives a shield, but it only activates if you dash while a bullet is in your dash distance, makes approaching projectile users safer.
c) one is a multi-dash, while dashing you can chain another dash by pressing dash again, can also change direction. Can chain dashes together until stamina runs out.
That's really it. As for the usage, dashing is your main defense, since there's no blocking in this game. You want to use it to position yourself so you can both avoid attacks and punish enemies.
One more thing. There is a stamina bar that might be a bit hard to notice. It's the small gray bar above your health meter, only visible when you use it. When stamina is empty you can't do any special moves, this includes chain dash. The squares on the floor in the dash shop replenish your stamina, so that's why you can dash for longer in there.
That is all.
You just have a very tiny timeframe to do it after your character stops.
Double-dashing should become muscle-memory pretty quickly and that is really all you need.

For practical use, it can help you travel through areas much faster.
I'm not sure if its any use in fights, except if you want to get away from one.
If you keep practicing the timing, you will eventually get the hang of it.
