I thought maybe it was a jackal representing Anubis, god of the underworld

The way I see it. The Jackal was a god/AI that, through the visions, made you go to fight Judgement, the final boss. The Jackal knew Judgement wasn't killed and was just waiting under the city, so he used the excuse of "Find a cure to your sickness" to get you to get end Judgement once and for all.

My interpretation is that the jackal was a hallucination caused by the drifter's sickness that kept appearing and seeming to lead their path to freeing the Judgment. I saw the Judgment as an otherwise dormant artifical monstrosity that was never supposed to see the light of day, and the columns primed it to be turned on.
Or maybe the jackal was a projection by whatever technology was containing the Judgment, and it led the drifter to "eject" the Judgment out of its system so it could be finally erased.

I think the "shining diamond" in general, though, was just part of a delusion of salvation, since the buffalo-man in the Gauntlet lobby has a picture conversation that shows he sees the same thing and is experiencing the same internal bleeding ailment.

But Guardian don`t know about Judgment!

Guardian? You mean the jackal? I don't know what's in the game that'd support the fact they don't know, or whether it's explicitly implied they don't, unless I'm forgetting something.
