Since day 1 of the first Baldur's Gate, items placed into containers would remain there forever. The issue introduced with BG2 was that some areas became inaccessable and so you wouldn't be able to get to the containers anymore - even when an area SEEMED to be the same, it wouldn't be. Example, Fighter type characters who take over Nalia's keep after finishing her quest. When you take control over the Keep the area number changes to the new one and the old area cannot be reached, even if they physically look identical. Any items that were in the old area are gone. So you never wanted to stash something in a stronghold until after it became your stronghold.
The adventure mart is a safe place to keep stuff - but it's not a very GOOD place to keep stuff. Much better is the Copper Coronet. You have much easier access to the edge of the screen for traveling, and there's a couple of vendors and a tavern right there. I like to use the two market booths that sit in between the two entrances of the Copper Coronet. It lets you access your stash(es) without having to area transition inside the CC, but the CC services are available if you need them. Having 2 containers is also nice for organizational purposes - say, scrolls in one, and everything else in the other, or quest items in one and equipment in the other, etc.
The Copper Coronet is also a big quest hub (which the Adventure Mart is not), and many of the NPC companions that you dismiss from your party will go there, so it's convenient for picking them back up if you want to do that.
