i recommend:
Some of CD-Tweak components like improved companions leaving dialoges, put more endless bags, cromwell can enhance stuff from the TOB Dungeon, allow Cespenar use cromwell recipes and: change grandmastery bonuses to true grandmastery (from baldurdash) it makes the 5 pips into a weapon rly worth it!
Assasination: If you like some more evil quests
SB-Silber: A good way to get the silver dragon blood!

Is there any super simple tutorial on how to install that thing? :D
Surprised no one has mentioned the other Weidu>Updated Mods. Most people really like Ascension. I use the Item Upgrade mod to keep my favorite items relevant in the later game. If you use this, Sword Coast Stratagems is recommended to keep the game balanced.
I also like to experiment with the various NPC-Thief mods, as the lack of good thieves has always been a BG2 issue. Latest was Amber, who is an interesting character, but with an inconveniently-timed personal quest that may not be manageable for early game parties. I also like the Solaufein mods, but screwed this up in this run. And I have found out that Valen and Sheena have been updated for EE (find them at github), easily my two favorite original NPC mods.
And here is a warning. There is a short mod like BtB called Tower of Deception that seems geared for a paladin-playing party. If you have Keldorn or are one yourself, it is fairly manageable, although the pay-off is pathetic. But if you are another type of party, the final battle is a pain. I tried with an evil party. Eventually I used EEKeeper to make Korgan immortal and let him beat on the boss while I made dinner. 20 minutes later he was still at it and the boss was still standing!
Oh, and this is essential. You should have EEKeeper and CLUAConsole handy and set up. Beamdog did a full-on job of eliminating a lot of the exploits and cheese of the original, without fixing most of the bugs in the game, especially for quests and strongholds. You may need to summon Elminster on your own!
Weidu is self-extracting, which is the whole beauty of it. The trick is to install in the correct order. You need to carefully read the readme.txt for each one to determine when to install. Tweaks always goes last!

IWDification- Adds some icewind dale spells into the game. Static charge for druids is a tad too powerful, but call lightning is pretty strong already.
Fade-thief companion mod. Romance is very good, if you like that. I reccomend editing her "hide in shadows" sound .wave file though. It's cool, but too long.
Adrian- Excellent sorcerer OR cleric/mage companion

The original, by Weimer, is not compatible. But there are actually two Solaufein mods that are.
