Alternatively, there is a setting option somewhere to shut up all the party character talk when you select them and make actions and all that, and that helps. There are tons of available companions in the game world and not all of them are that annoying though, but in BG1 mainly, now I'm thinking of the wrong BG game... BG2 they do talk a lot more and there is a lot more character narrative.
Icewind Dale is ideal if you want to make your own party, the game is designed for that if you haven't played it already...
It's just hard to roleplay in a game or have any sort of identity, when you have companions always demanding you do this or that. Feels like a damn checklist.

What happened to just centering the story around the protagonist and letting me be who I want to be, without making the game impossible to complete?

Just make sure to never dismiss them from your party. I think they just disappear if you do that.
However, most people would probably work out to not do that - you are supposed to hire people who agree with you, and not hire people who do not agree with you. I am sorry you needed to have this explained to you.

I simply asked if it would be possible to make your own party so I didn't have to deal with annoying scripted companions. I already got my answer from more respectable people above.

Before you go to Spellhold, take Yoshimo. He leaves, and is replaced by Immoen. Once out of Underdark, dump her for any other that still has quests.
In the beginnig after you exit Irenicus dungeon, play with Jaheira until you are summoned to The Harper Hold. This is a very good encounter with Splendid loot (Ring of Wizardry ++) You cannot get this if you dont have Jaheira. After you can dump her and she leaves Permanently.
In TOB you can have room For Saverok. Or any other. Or none
A 5 man party is enough and will level faster than a full 6
