Stealing in BG2
"In Gaelan's house, where you start out, there's a fence upstairs. Neither of them comments on it when you unlock their chests and steal their stuff, right in front of their faces. (You can do this in just about every house in the city, actually. Less realistic, but just as well--it was a huge pain in the last game trying to figure what was fair game to pick up and what would bring the guards storming in.)"

"People in Throne of Bhaal tend to notice and attack you if you open containers in their houses, the way they did in BGI. I don't know why they turned this annoying feature off in Shadows of Amn and then back on now. Save before you snoop--or come back at night, as people in houses often go to sleep in the dark hours."

Is it really true? They cut off this npc-reaction features in Shadows of Amn?

And also: Do stores close at night and some npc go to sleep in SoA?

Some stores close at night and some don't. Most of the stores that close are street merchants who just leave their market stall for the night. Some NPCs go to sleep in the sense that they're not available at night. You won't see them walk back to their house or anything, they just appear or disappear from their usual spot depending on the day/night cycle.

But what about NPCs in houses? are they going to sleep? (I remember this in ToB, but what about SoA).

As I recall it's not as big of an issue in most of SoA...I do believe there are places where it is, Brynnlaw comes to mind

Gaelan's fence, Arledrian, of course is not in a position to call the guards... as a thief, he himself would be arrested. If you want to unlock his chests and take his stuff, I can't remember whether he'll fight you himself or simply put up with it.

There are in fact just remarkably few private homes to invade and steal stuff from at all, in Athkatla in BG2: unlike BG1, most houses simply aren't enterable at all. And not many things to pickpocket either, although your Pickpocketing skill still gives you a chance to successfully steal from a store. There are a few stealable things in private homes in the Bridge District - including one person who keeps an ankheg shell, and good luck actually having a character who is both strong enough to carry it AND stealthy enough to steal it.

BG2's thieves of course still have Open Locks and Find Traps to occupy their attention, and those who are good with weapons can Backstab too.

I typically steal everything I can from every merchant who can be stolen from even though we're a good party. I run a better Thieves Guild than the Shadow Thieves. I usually do three big sales, one to Gorch at Mae Vars guild hall, one to Roger the Fence in the Sewers and then one to the Shadow Thieves right before I head out to return the Lanthorn.
