The only strict reason I see for EE would be if you want to play Beamdogs DLC Siege of Dragonspear (which is definitely not my case - but I would suggest you to read reviews elsewhere since this topic can lead to very polarized discussion).
Yes, you can. You have to use mods which are compatible with EE (e.g. Stratagems works without problem).

In the enhanced edition there are new characters with their new quest (most of which are fun), and Siege of Dragonspear as a "not that great" expansion for Baldur's Gate 1.
About the new kits: Dwarven defender is definitely fun, and a blackguard is an interesting kit as well. The new monk kits are nice, but the new class shaman is pretty lame. I didn't try the new sorcerer kit yet, so I don't have an opinion about it. And they changed wish to have random options, so you can't reliably "wish rest" anymore (unless you save before and keep reloading untill you get the rest option). Many of the mods that were available to the original are also available to the enhanced edition (especialy the popular ones such as sworg coast stratagems).
The best thing about the enhanced edition in my opinion is the inventory managment tools:
You have auto loot button that show you everything there is on the floor and you don't have to move from corpse to corpse.
Potions can stack up to 24 instead of just 5.
Ammunition can stack up to 80 instead of 40.
In one of the quests of the new companions you get a bag of holding, so you could have one in chapter 2 rather than wait until spellhold.
That is my opinion about the enhanced edition features. Overall, it did make the game more fun to me and I would recomend it. If you wish for an expanded perspective about any of my personal opinion (such as why do I like the new monks kits or why don't I like siege of dragonspear) you are welcome to ask :)
