Get Edwin, Jaheira, Korgan into your team. Depending on your charname I'd add jan janssen, keldorn, viconia/anomen.
We haven't learned much yet about the main character, the "terrible starting stats" and the "terrible party configuration". Stats alone aren't everything, and the attributes of companions are fixed anyway. Maybe it was a bad choice of the class of the main character or an underpowered mix of companions.
Yes, I'm sure it was a bad party mix. I didn't know enough about the game to know what I needed. I know better what I'm getting into now, but I was woefully unprepared for the brick wall I ran into in chapter 6.
I should say, that I prefer the main character to be a melee class. I'm thinking about berserker, if that's a reasonable choice.
Also, I remember having some trouble trying to figure out which mages I should invest time into.

Berserker is very strong, so it's a good choice, although there's a Berserker NPC.
I would go for Edwin, Jan Janssen, Jaheira, Keldorn, Anomen with that. Viconia, Aerie & Haer D'alis are worth considering as well.
Mage classes tend to be stronger than fighter classes but this mixture will be very effective.
Edwin is the best mage in the game by far as long as you don't consider his necklace to be a disadvantage, so there's really no discussion here. Pick him.
Jan Janssen is obviously not the best half mage or anything but he has that thief class that you should have in your party to scout, disarm traps and unlock stuff. If you prefer a useful thief for backstabbing etc. don't pick him but if you have a lack of a thieving class he's a great addition, especially since he gives you some additional mage spells in your party.
Jaheira is a powerhouse in every way. Fighter/Druid is a very strong combo that makes for an extremely potent tank due to Iron Skins but can also summon Elemental stuff that will kick the evils butts very hard.
Keldorn is nothing extraordinary by himself except for his exceptionally good armor. His kit is simply strong due to the True Sight and Dispel Magic spell you can spam and because he can use that ridiculous sword. If you pick him, do the cult of the eyeless quest fast to get those gloves for his horrible dexterity.
Anomen or Viconia? is an endless debate that solves itself if you go for Keldorn. If you don't: Anomen is a better fighter because of his fighter levels and solid consitution (although he has low Dexterity, like Keldorn which can be fixed with Draw Upon holy might for the most part though) but Viconia can make for a potent anti mage due to her innate Magic Resistance which can be buffed by a couple items. Her big issue is the lack of a second class (single class clerics fall off in the later stages of the game) and her poor Con which can be fixed by the eyeless cult quest.
Aerie of course is also a good option, providing additional mage spells but giving you less cleric spells (which shouldn't be that much of an issue since you already have druid spells). But she is significantly harder to utilize than the other two.
Haer D'alis can be a powerhouse but he needs a lot of micro and patience.
If you like melee these are imho the best choices of mainchar:
Kensai, especially dual classed with Mage or Thief: makes for a very hard hitting fighter that has AC issues (which can be fixed a bit by jaheiras barkskin and some protective items). as kensai/mage you can use defensive buffs and then proceed to shred everything to death or as kensai/thief backstab everything to death. dualclassing needs some experience and knowledge though as to when to dualclass and how to bridge the weaker levels.
Dwarven Defender: insanely good tank that sacrifices some offensive prowess. give him the flail of the defender from the salesman in copper coronet and he reaches 70 or 75% physical resistance with his defensive stance (I always forget if the flail gives 20 or 25%). pair that with the cloak that makes you immune to magic damage and watch the world burn while your mainchar does not give a single ♥♥♥♥.
Berserker: OP ability and no drawbacks, but there's already a berserker NPC with solid stats and weapon proficencies in Korgan
Inquisitor: gets those awesome dispel magic and true sight spells as i already explained but loses the ability to use lay on hands which is nice instant healing and the ability to cast spells which is not that significant although he will miss out on armor of faith and draw upon holy might. again, there's already an npc of that class, although with bad combat stats but with a very good armor
Cavalier: doesn't get any OP abilities like the aforemented chars but gets a set of nice bonuses and resistances without drawbacks like the other kits.
Now to specs:
Don't take a random roll for your mainchar if you go SCS. Go with max STR, DEX, CON. Take a big ♥♥♥♥♥♥♥ roll. INT won't hurt either for stuff like Mind flayers. use draw upon holy might on every cleric and your mainchar in every fight to boost those stats even more.
Items:
Prioritize quests that give you really useful rewards.
Absolute priority:
D'arnise keep quest gives you Flail of the Ages, an insane mage shredding weapon and an insane weapon in general.
Druid grove provies weaponry for jaheira in the form of several scimitars & clubs, some of them very strong, too (Belm gives +1 attack per round, blackblood has +3 acid damage (also for mageshredding) and also provies a couple nice general items to have.
those 2 questlines are to be prioritized because they are pretty easy while giving out huge rewards.
the eyeless cult is harder but also gives killer items (the gloves of dexterity for keldorn/anomen or any low DEX char and the girdle for viconia or any low con char)
the random fight in the temple district might be hard in SCS (in regular game it's challenging but not too hard pretty early on) but gives you some nice and expensive gear while also giving you that Jesus Katana that everyone talks about.
On a side note which shouldn't be one since that's kind of the thing that stopped your run:
What specifically was unbeatable to you and had you done all the quests and gotten all the items prior to that moment?
Sometimes, a weaker toon may be better than a stronger one based on what that toon can offer to the overall goal. For example, my LV7 Thief dual classed to fighter was a preferable choice for a melee combatant for my party than any of the stronger alternatives I could have rolled because in a party composed by Nalia (a mage and a very weak thief), and Anomen (a Cleric and very weak fighter) having a toon that can have good thieving abilities and decent fighting abilities was more helpful than having an epic thief or an epic melee fighter.
Choose your party members carefully, with balance always in mind, and they will cut through the game well. This however, I would have to see how it applies to SCS in the future though, so take it with a grain of salt.
When I originally played this game, I just accepted the first stat roll as is for my character and never looked back, but this time I made sure to roll some good stats.
Good party suggestions, but also, is it feasible to manage oppositely aligned characters in the same party?
And yes, random fight is difficult in SCS. At least for me, the random fights were absurdly difficult early in the game.
There are party conflicts that may arise. Korgan will attack Aerie. Aerie will leave if Viconia is in the same party, also Edwin will make her leave. Keldorn and Valygar will attack Viconia. And Minsc will attack Edwin. So it's best not to mix them up!

I slogged through the game until chapter 6. There were plenty of difficult fights, mages in particular gave me a lot of trouble. I couldn't break through their layers of protection, and they would cast time stop and wipe my party. I'm almost sure I beat some fights in ways most people would consider cheese.
The Bodhi fight in chapter 6 is where I hit a brick wall and absolutely could not continue. I never even came close to winning that fight, and to this day have not had a harder fight in any RPG I've ever played. I decided to give up and start a new game a later date.
It's been years, so the details I forget, but I just remember that Bodhi fight near impossible. This go around, I'll be much more prepared for it, so it may not be a problem. Maybe there was some trick to the fight, but to be honest, I slogged through so much up to that point I was burned out on the game anyway.
I must say though, I was really impressed with the SCS mod. I've never played the game un-modded, but my biggest gripe with RPGs is how easy they are. Certainly not the case here.
Yeah, Edwin is incredibly powerful. His massive amount of spells memorization slots beats anything in the game. Sadly, only Korgan will work with him. I think Mazy will also have problems with Edwin, which I forgot to mentioned. I hate Korgan, so in a party were Edwin is to be allowed to join I would make sure my main is a melee guy to compensate. Also an Illusionist Thief like Jan would complement Edwin well, and of course Viconia. Such 4 people party, with Edwin and Jan taking care of magery and thievery, and your main as the muscle would work really well.
One main character you could be used for that could be a half-Orc Wizard Slayer with 19str, 18 dex, and 19 con, and prof points in Slings and staves. Such combo would allow for some serious butt kickery from a safe distance with the slings, and for him to pound foes from behind the summons Edwin, Viconia, and jan would cast with the Stave of Rynn +4. And he would be able to quickly shut down mages making the game significantly easier for you!

There is a trick for that. There is a spell called "Invisibility 10 radious" which your mage should cast as soon as the screen clears up the map in those ambushes. Then you would move away your whole party to the northen edge of the map where you properly prepare to take them down. You have to make sure your mage is in a position that spawns away from the foes, otherwise they'll shut him down.
Yes, I should probably use that spell way more often.
