Can I only complete romances strictly in Chapter 2 or can it be delayed further?

I'm a bit indecisive with picking either Jaheira and Viconia. It certainly doesn't help that I want Imoen in my final party as well. The thing is, I don't know who to choose, and if I wait too long, the two will get into a conflict with each other since, you know, you can't have two lovers, it ain't that kind of game.

Now I have beaten this game once, and have played it in the past before, but I never considered "delaying" the romance until Chapter 6. I mean, can you even continue your usual romance business in Chapter 6, or is it strictly limited to Chapter 2?

Yes, romances for vanilla NPCs can be completed after you return to Athkatla.

Understand though, sometimes time itself will be a limiter. In the case of Jaheira, I found that I had to spend weeks(in game) waiting around for the next event to happen. ESPECIALLY in chapter 6. I was done everything except that and as time progressed I realized that I was sleeping at inn after inn waiting for events to happen that were timed.
