Chained Together is 1-4 players (online or local MP).

When selecting "Host Game" (for online MP), the second drop-down menu is for the number of players. For a Local MP game, it is the first drop-down menu option.

anytime i do 3 player it removes normal and forces it to beginner mode

Yes... Chained Together is playable with 1, 2, 3, or 4 players.
