Beginner mode lets you to teleport somewhere close to the highest point you've reached in that climb, allowing you to recover after a fall. Normal mode doesn't have that - if you fall, you have to climb back up from where you landed. Lava mode additionally has lava rising after you, which forces a time limit on your climb.
