Whenever the little white icon appears at the bottom right, the game is saved. Thankfully, while you can't /directly/ force the game to save, there are loads of ways to do so indirectly:
* Whenever any dialog plays (even trivial dialog), the game is saved. Note that this means that anything you can interact with (via the "E" key) will force a save, so trying to open a locked door, interacting with a shrine, or similar actions will save the game.
* Whenever you complete a combat, the game is saved (actually, I suspect it is "gaining XP" that triggers it, but the only way you gain XP is via combat, so...)
* Anytime you gain a new item, the game is saved (this includes opening a chest).
* Whenever you level-up, the game is saved (when you exit the level-up screen)
* Whenever you successfully use crafting, the game is saved (when you exit the equip / crafting screen)
* Whenever you use one of the items that alters your stats permemently (regardless of who the target is), the game is saved (when you exit the inventory screen). Note that healing does not save the game.
I think there are probably some other actions that you can take to force a save, but that's enough for most puposes. :)
