Report a translation problem
You can for example override a Thunderjaw which will then start to fight for you. However, it's much easier to use corruption arrows from a distance than sneaking close enough to a Thunderjaw to actually override it... it's possible though...
But overriding a Sawtooth or a Ravager or Snapmaw is much easier and can be fun. If your machine prevails, fine, if not you can usually easily pick off what's left. :)
Oh yea, I overrode a stormbird last time round. It didn't live long, tho, and I was hoping to ride, it, but no such luck. I just never saw the point, when, like you said, they're generally easier to kill than override.
And the only mount I REALLY like is exclusive to Forbidden West.

Mounts are permanently overriden by default, other machines not. It's not a priority skill, but I like to use it every now and then. Especially on harder difficulties with tougher machines. Letting a Fireclaw destroy some daemonic Scorchers is nice to watch. ;-)
In Forbidden West, there is a skill in the machine skill tree that let you decide between agressive/defensive behavior.
