The correct launch param for no workshop is --noWorkshop (2 hyphens and capital W -- see Appendix A in troubleshooting guide for infos)
Also, try the Silicon Skin mod which makes the in-game UI a lot crisper: http://steamcommunity.com/sharedfiles/filedetails/?id=424995783
I'd had a look through those, but there's really nothing there that applies as fra as the UI goes; the game itself does seem to be rendering in my display's native res, but the UI looks like it's been upscaled from a far lower resolution (which, indeed, may actually be the case!)
It's almost like a "blur" filter was placed on top of the entire UI, perhaps as an aesthetic decision.
Ah, I hadn't noticed the double hyphen! But I tried adding that launch param correctly just now... and still get the huge Steam Workshop window on the main menu, with Workshop functionality intact.
