Well one way to use canals is if your next city segment is still a ways away from a river or dam and you want to save money on pipes, you build the canal downhill and let it spill into the river. It's one way to do it anyway.

Some tips I've given before,

I've been building and using canals since long before there was a Canals n Quays update.
Up until that point, canals were just water features as there were no transportation for them. After the Mass Transit DLC and the creation of a couple of mods, you could then use canals as transportation waterways too.
Since then, I continue to build my own or make use of the canal modules wherever I see fit. They also work nicely with the ferries from the Mass Transit DLC.
Since the uses of canals vary a lot, it would be easier to answer if you described how you wanted to use them.
