Like others said, page up and page down for height. So you know, it moves in "steps" The default is 4 steps. On the left of menu bar where you can select the different types of curves or straight is also a button that looks kinda like a cylinder. You can use this to toggle your "steps"
The way to have nice aligned bridge is to place the bridges first so you can make them both the same length. The alignment tools will allow you to align them with the road you wish to connect to so can be confident are straight. So built the matched pair of bridges and then connect them to the surface road.
A bridge high enough can even go over buildings.
