There is an option in the Content Manager at the top of the menu to unable all assets. I don't know of any way to unsubscribe from all of them except one by one.

The quickest way I found to unsubscribe all from workshop. First google for a script like https://www.reddit.com/r/CitiesSkylines/comments/40n75g/small_script_to_unsubscribe_all_steam_workshop/ Then open the Chrome and run it at your subscription page.

To remove all workshop subscriptions go to the in game content manager and then Steam Workshop, click the Unsubscribe all button.

the unsubscribe button is there just as Bradybrklyn said - thanks for the help. Taking a long time to set everything up the way i should have in the first place! But well worth it - ive created several collections with everything from mods, services, low res, industry etc for anyone that is interested
