But, in true Kingdom Hearts fashion, most of the story will blow over your head if you haven't kept up with all of the side games (and KH3 itself will "spoil" a few plot points if you haven't experienced those side games). There are... *quite a lot more* games to go through than just KH1 and KH2.
If you really want to dig into the story, I'd be happy to list out a recommended play order/YouTube watch order for you.
Most of the criticism KH3 gets is in the story department, and admittedly, it does try to tie up every last plotline in every prior KH game, so it can be a lot to take in. But if you've been following the story, there are quite a few "OHHHH" moments to look forward to.
As for difficulty, I recommend selecting to start the game with Pro Codes (this isn't really a spoiler, it's a choice you make in the opening sequence), as it will allow you to turn individual features of combat off if it's too easy for you.
I didn't find Normal too easy (but I'm also a story focused player anyway), so for you, maybe give Proud a try.
The Disney Worlds you visit essentially have 0 story progression then it all comes after they are finished. There is not many of them and they each take awhile. They also have no effect on the story that happens after them.
The Worlds themselves are mostly you just sitting and watching the movie play out as you do some chores.
The way people make this game hard is by actually nerfing yourself. If you use everything at your disposal you can spend entire battles immune to all damage while everything around you is defeated. Links are the new summons and they are so powerful they can break any fight in the game by just using them once.
On that note, 3 is worse then 2 and 1 by a country mile but if you do want more Sora and something new then its passable even though 3 itself is not a good game by any standards. Even critical mode data fights can be cheesed by accident unless you again, nerf yourself.
I'll nerf myself if the game is too easy can't wait to see that new gameplay.
I never did the KH1 optional end game bosses and KH2 neither so if 3 is not as good its NO PROBLEM i'll enjoy the remaster of 1, 2 a LOT.

I may not be 100% right but there is a brief review of all the games in 3. I may be wrong but I recall that happening at the start
You're skipping a majority of the buildup and explanation as to what 3 is even about.
Its like reading the first couple of novels in a series, and then skipping straight to the finale one after skipping three books in between.
