These are what's referred to as the "Final Mix" versions of KH 1 and 2. Think of them as director's cut versions with a bit of extra content that wasn't in the original PS2 releases. Bosses, equipment, cutscenes, stuff like that.

My biggest complaint with it are the heartless recolors in KH1. I find a lot of them simply don't look good and there's no option to swap to the original palettes.

This games has: Kingdom Hearts 1 Final mix, Kingdom Hearts Chains of memories, Kingdom Hearts 2 Final mix, Kingdom Hearts Birth By Sleep. Also has only on video the 2 Kingdom Hearts from Nintendo DS.

The Final Mix versions originally were Japan exclusive reissues of the original game. There's a lot of content that wasn't present in the original releases.
Ntm giving us the option to skip cutscenes in KH1 so you don't have to listen to lines like "NOT CLAYTON" repeatedly if you're struggling against a boss.

I generally avoid modding, but that is REAL tempting. Thanks for the tip!

I've created a guide with the correct order to follow, so you can enjoy all the games without worrying about missing anything:
