The slower movements from both you and the enemies also makes the parry mechanic work well - try to time your attacks to deflect the enemy's.
Starting with the Sword is the "hard mode", but you'll get faster and better attacks earlier on this way, which should suit you well.
Take your time in fights, don't rush them and you'll be okay. Also use aerial combos as much as possible, they come out faster and will probably feel more responsive for you.
