Because it contains the final mix versions plus lots of other titles:

KINGDOM HEARTS FINAL MIX
KINGDOM HEARTS Re:Chain of Memories
KINGDOM HEARTS II FINAL MIX
KINGDOM HEARTS 358/2 Days (HD cutscene compilation)
KINGDOM HEARTS Birth by Sleep FINAL MIX
KINGDOM HEARTS Re:coded (HD cutscene compilation)

Since 1.5 was the first PS3 collection. 2.5 was the second PS3 collection.

1.5 and 2.5 are bundled together in all releases after the original PS3 releases. So for PS4, Xbox One, or Windows.

They had additional versions of Kingdom Hearts 1 and 2 that added some content before DLC was a common thing.

1.5 is a collection that includes KH1 Final Mix
2.5 is a collection that includes KH2 Final Mix

1.5 + 2.5 is the two collections together.

Was there a lot added or changed to this version?

That's just a symptom of a game like Kingdom Hearts 1 or Final Fantasy 10 being released slowly in Japan, then North America, then Europe. By the end they've added some optional fights and stuff. Then they release it again in Japan with another bonus probably.

I get the numbers, what I don't get is why the names for these games are all so ♥♥♥♥♥♥♥ bad.

They're not, it's just the HD collections that have stupid names.

More like a Tetsuya Nomura thing.

1.5 refers to 1 and the games which take place between 1 and 2.
Kingdom Hearts Final Mix (original game's enhanced edition)
Kingdom Hearts re:Chain of Memories (PS2 remake of the GBA Chain of Memories, which takes place directly between KH1 and KH2)
(cutscenes) 358/2 Days (DS game, takes place during the events of Chain of Memories and directly up to the beginning of KH2)

2.5 refers to 2 and the games which take place between 2 and 3, although it doesn't quite work out so well here which is why they ended up doing the 2.8 release as well.
Kingdom Hearts 2 Final Mix (enhanced edition)
Kingdom Hearts Birth By Sleep (takes place way before KH1)
(cutscenes) re:Coded (DS remake of a mobile game, takes place after KH2).

2.8 is goofy since it includes what you could consider more the 2.5 game (similar to Chain of Memories how it could be 1.5 in terms of mid-sequel). Dream Drop Distance takes place between KH2 and KH3. But also includes another game which takes place really early into the timeline around Birth By Sleep (hence it's number of 0.2, iirc one of the hidden movies teasing Birth By Sleep used 0.)

It makes sense if you know it, but it sounds a mess. KH naming conventions don't quite work out too well, particularly the collections. But it was a neat thought. Had DDD come out earlier and been able to be included in 2.5 then that would've worked better.

Final Mix were Japan-only expanded versions with new extra bosses, some added cutscenes, and general fixes.

1.5 means it included 1+ games leading up to 2.

2.5 is means it included 2 + games leading up to 3

2.8 is them realizing that they hadn't remastered DDD yet, so its a last stop before 3.
