As for hp and MP: These vary wildly based on the choices you make at the beginning and what equipment you have on. If you chose the sword you'll have less mp than if you chose the staff etc. Fill up your accessory slots with gear that adds what you want. For beginners I strongly recommend taking the staff and sacrificing the sword. Gives you a lot of extra mp and magic is very powerful throughout the entire game (also gives more cures). Sora's melee damage is always fine even without the combo boosts and strength ups from sword.
Bear in mind most walkthrough videos are of people who wither took the staff or the shield ( in my walkthrough vids I ran staff). They all sacrificed the sword (IE: lower str stat but higher mp/hp/def).
If you are desperate for an easy win though you can cheese the crap out of the first 2 ansem fights by bringing lots of ethers/elixirs and spamming strike raid. Strike raid costs 3 MP, hits 4 times for massive damage, and makes you completely invincible for the entire duration. Using the spellbinder keyblade and some magic boosting accessories like the holy circlet (you got it from oogy boogy) will give you enough mp. Wait until he uses a move you can't handle and press triangle. Bear in mind this is completely useless in phase 3 as its a flying segment and strike raid cant be used in such. The last phase is actually kind of challenging if you arent good at timing when you get in and fly away but the age old max range plus firaga spam is a reliable baby strat.
You could also just learn to time your dodge rolls so he never hits you. He has a fairly predictable pattern if you pay attention to his voice lines.
So I ended up picking sword seems like that was a mistake
In the first ansem fight however I’m just struggling because of the guardian once he yells “submit” I run but his guardian always gets me and kills me, I have zero idea how I get rid of him during that stage doing freeze just lets the guardian get me

Level 50 is bare minimum, 60 is for a smoother ride, 70+ is a cakewalk.
if ur on the highest difficulty, thats why.
lowest difficulty should be a cakewalk.
Leaf Bracer(gives you invincibility while using Cure/Cura/Curaga.
save up Munny, and buy Elixirs or Ethers.
Spam Strike Raid to spam invincibility frames to deal damage.
Use Oblivion Keyblade, you can get it at the end of Hollow Bastion after fighting Ansem-Riku, you look backwards facing the entrance of the boss room, and youll see a chest, glide to it.
have a combo finisher that does the upward vertical spin attack.
spam Ragnarok and Ars Arcanum/Last Arcanum

I just recorded myself beating ansem 2 (solo one) using a level 54 sword sora. Like you my sora doesn't have leaf bracer till 69 the main reason you dont take sword. I used the same strategy as I mentioned above and it took about 3 minutes. I'm using divine rose and str/hp boosting accessories.
This is on standard (final mix) difficulty.

I played 1, ReCom and 2 back in the day on a slim in 2010.
Then I got remix on ps4 like 7 years ago.
