Kingdom hearts 1 extra bosses on proud
I have never played kh1 before doing this game on proud. I am currently attempting post game bosses like ice titan, the sand mech, and the clocktower ghost to no result. At the start of the game I picked shield and dropped rod. I am approximately level 60. Am I underlevelled or underskilled? I'm using Oblivion as my keyblade for damage and whatever one boosts my MP for the ghost and ice titan.

Oblivion is kind of a bad choice, you might have better luck with Divine Rose, it doesn't tank your MP and it's about as strong, if not stronger than Oblivion,

For Kurt Zisa (the cobra robot thing) don't forget about Aero spells (you get just enough time before the silence hits to quick cast it), items and Tinkerbell, they can really help.

For Phantom, his most dangerous attack is the homing magic blast, if you get the
clock tower in between you and the attack, it'll absorb it and you can get right back into it.

Ice Titan is all about the blocking and healing, just note Aero will not work at all, the first two tiers won't stop it and the third he'll just make the attacks bigger to go around it.

The keyblade you get from the Ice Titan helps with Phantom quite a bit.

More levels can't hurt, some extra stats especially MP will help out quite a bit,
if you can stomach making it, Ultima Weapon helps a lot.

Looking at a list of abilities, the only "important" skills that you can still gain from leveling are MP haste and MP rage, Haste at LV 72 and the rages are at an absurd 90 and 100 respectively.

Divine Rose is indeed the best physical-style keyblade in KH1 Final Mix. For whatever reason, it received a massive buff that eclipses any other physical keyblade, including Oblivion and One-Winged Angel. It also helps to do enough synthesis to get the higher-quality accessories like the Crystal Crown. Strength builds will also want to pick up the Ifrit Belt from Agrabah for it's massive STR up.

The Ice titan is almost purely a guard-timing and parry check encounter. Take off Dodge roll, run onto the coliseum's bleachers, lock on and alternate between guarding and parrying the icicles he keeps shooting at you. Every successful block or parry deals recoil damage to him, and he can be killed with that damage alone (which is also a good leveling scheme if you slap on a few Tech boosts). Once he's to Orange bar he'll breathing frost at you; Glide or superglide to another corner of the arena to evade. Important to NEVER USE AERO in this fight, as it renders his icicles unblockable. It's purely a timing thing, no cheese possible.

Kurt alternates between locking your magic and generating a shield that prevents physical damage. Every time he phase-changes he gets stunned, letting you get a few combos (Or a Ragnarok) in. Aero is usable and takes a lot of the bite out of his attacks, and when you break the Orbs for the first time take a moment to summon Tinkerbell. He's honestly quite simple with Tink's constant healing keeping you up.

Phantom is a gimmick boss. Make sure you're stocked on Elixirs, and throw extra ethers on your party for good measure. For you, you definitely want the Diamond Dust Keyblade to make up for your MP deficiency, so hold off until after you beat the Ice Titan, and aim to have as much MP as possible from your accessories. Put Stop on your quick-cast menu and make sure to re-up it every time you notice the hands on the clocktower moving. The Phantom himself is immune to everything except whatever the ball's color indicates, and most of the time it's going to be some sequence of Fire, Blizzard, and Thunder spells. He only has two attacks, either a claw-swipe that can be naturally evaded by staying on the move and a curse spell that can be avoided by ducking around the clocktower when he goes to cast it.

Aeroga (i.e. Aero with all the upgrades) can help a lot for some of the superbosses, especially Phantom. (Don't use it against Ice Titan.) To get it, you'll have to recover all 99 Dalmatian puppies with Aerora already learned. And Aerora can be found using one of the Yellow Trinities at Neverland.

I see you chose Shield. I recommend equipping the following abilities, as you should have them by now:

-- Leaf Bracer (protects you while casting Cure magic)
-- Second Chance (prevents fatal damage if you have more than 1 HP)

They're not a total necessity, but they will help if you're struggling with dodging attacks.

One important thing to note about Tinkerbell: she also sacrifices herself to restore all your health if you take fatal damage.

With Ice Titan, you have to understand when to dodge and when to block. I managed to defeat him while under Lv 60, but it took me many attempts because I kept trying to block every single icicle, which left me open to more damage against certain formations. Study his icicles and tells carefully.

For Kurt Zisa, two extra summons *may* help against his physical damage shield. Dumbo renders you invulnerable while out, and deals ice damage. Meanwhile, Bambi drops MP orbs around you while summoned, which can help if you're out of Ethers and Goofy's MP Gift. (You can also strike Kurt's shield for MP orbs if you get desperate.) To extend the duration of either, increase your MP and equip as many instance of the Cheer ability across your party as possible.

What tends to give people the most trouble, though, is his spin attack. You'll have to play with the dodge windows a bit on that one. His vertical spin in particular demands a very specific angle of retreat.

To expand upon what others have said: One of the reasons oblivion is not recommended is it cuts your mp by one and magic in KH1 is based upon your max MP (so is summon length). Both Kurt Zisa and Phantom are magic heavy fights so having more MP is recommended. You get the divine rose keyblade by talking to belle in the Hollow bastion library after you clear it once and it is by far the best non-ultima keyblade for everything except phantom (use diamond dust from ice titan). For Ice titan just stand in the corner of bleacher and block icicles back at him while moving back and forth from one corner to the other to avoid his breath. Might take a few tries to get his pattern down but once you do he becomes a nice level grind. You can grab a major ice resistance item outside the colloseum by blizagaing all of the torches.
Level 60 is a little low to be doing these though it just means you have a bit less health and damage. I'm usually 55 or so when I fight ice titan and he's a nice level grind with all tech boosts equipped If you don't have aeroga before moving into these fights fix that asap (but not for ice titan!).
I have most of the keyblades and equipped every skill recommended to me already. I haven't done much summoning because i swear the game will never let me, you have to have everyone alive and at full mp, right? i swaer it is always greyed out

You need both allies alive and I think 3 MP minimum on Sora. You also have to be in combat, except while in the colosseum where it's hard disabled. Last requirement is being on the ground, rather than flying via the perma-glide from Neverland, Atlantica, and Chernabog's arena at End of the World. Long as those conditions are met, nothing stops summoning.

Actually, I believe summons each have a particular MP cost, no? Like Bambi is 1 and Genie is 2 or some such.
