To elaborate a little:
There are many kinds of herbs (even more if you play with ACE or some other mods) but most of them are some kinds of flowers -- whether it's the pink (brightbell) or blue (frostsnap) ones from the forest biome, the small round cacti or the tulip cacti in the desert, or the poppies and violets in the tundra biome.
Early on you'll want to find some flowers in the world and probably move some close to where your herbalist will be set up -- once you have some herbs your herbalist can turn the flowers into seeds to plant more, so you can quickly set up a "garden"/patch of wild herbs.
Your farmer will also be able to farm the herb flowers at higher levels, so if you end up using lots of herbs for some reason then farming them rather than manually harvesting "wild" herbs is probably the better option.
Pretty much all herbs are used interchangeably, except in recipes which specifically call for certain flowers (e.g. various window planters), so if you buy some seeds/flowers from traders make sure you take that into account. There's nothing worse than buying a few flowers of a new variety so your herbalist can turn them into seeds, only to discover that they've been used in a potion or to make some sausages!
The real pro tip here is:
Personally I have a "vault" type of building I always build at the start of the game with like 40 chests in it, which eventually replace my drop zone. I always keep a 2x2 space between the building and roads which run all around that building... And use the herbs and bushes and what not to up the prettiness of the area my Hearthlings will walk around the most in the game. ;)
