List of updates to Remastered
Taken from the official website[oath.tales-ch.jp]:
  • Auto-save
  • Dash - This is faster than the usual running and you’re able to toggle it on or off with the touch of a button.
  • Removing enemy encounters - If you turn off enemy encounters, you will not engage in battle even after you touch an enemy symbol on the overworld. This likely eliminates the need for Holy Bottles.
  • Skipping events or Groovy Chats - By holding down a button, you’ll be able to skip through events or Skits.
  • Clicking through voice lines in Groovy Chats - By pressing a button, you’ll be able to skip to the next line in Groovy Chats as if they were normal dialogue in the story.
  • Accessing the Grade Shop from the very beginning - Instead of needing to first beat the game to access the Grade Shop, you’ll be able to purchase bonuses from the start.
  • Destination icon on the map - An exclamation mark will denote where you need to go to advance the main story. As well, the remaining distance between you and that destination will appear on the screen.
  • Cursor speed on the world map - By pressing down a button, you’ll be able to speed up the cursor while you’re on the world map.
  • Retry function in normal battles - Even if you end up losing in a normal battle and get a game over, you’ll be able to retry from that battle instead of needing to load up a save file.
  • Subtitles for dialogue in battle - When characters talk to each other in battle or use their Mystic Artes, subtitles will appear at the bottom of the screen so you can better understand what they’re saying. You can toggle this on and off from the options.
  • Making new Artes or Skills more obvious - Newly acquired Artes, Skills, and such will be green.
  • Color vision support - Any dungeon gimmicks that required the usage of colors to solve will now be solvable using other clues. In other words, even if you can’t see certain colors, you’ll be able to clear dungeon puzzles on your own.
  • The inclusion of certain DLC content - While not every piece of DLC from the original version of f will be in the remastered version of the game, we’ll still get over 80 items. DLC includes unique Groovy Chats, Magic Karta cards, items, bonuses, and costumes (past Tales games, school uniforms, formal outfits, attachments).
  • Dubbed versions of DLC Groovy Chats - Since the DLC Groovy Chats were only in the original Japanese, the remastered edition will have dubbed versions of them in English
  • Master volume adjustment - You’ll be able to adjust the master volume of the entire game from the options, rather than having to individually lower the BGM, sound effects, voice lines, and cutscenes.
  • Adjustment to certain sound effects
  • Dual audio (Japanese and English)
  • Button configuration for exploring and combat
  • Addition of an hourglass icon for time-limited events - Certain events in Tales of Graces are only available for a short period of time within the story, and they were hidden as well. The remastered version will add an hourglass icon to make it easier for people to find them.
  • No online ranking in Challenge Battles

These changes are also mentioned on the official English site:
https://en.bandainamcoent.eu/tales-of/news/whats-new-tales-of-graces-f-remastered

Here is the list from the official English site (it also contains some additional notes I've observed):
Quality-of-life enhancements
Autosave Function

Dash Toggle Function
While exploring the overworld, a character's Run can be changed into a much faster Dash with the press of a button. Toggling between running and dashing is also possible (doesn't stack with Grade Shop's "Maximum Speed" option or speed boosting dishes).

Enemy Encounter Toggle Function
An Encounter setting has been added to the Options menu. Setting Encounters to Off allows you to avoid battles, even when you come into direct contact with enemies.
*This effect however does not apply to certain Event Battles.

Skippable Cutscenes and Skits
Pressing and holding down the Skip Button during cutscenes and Skits will allow you to skip them.

New Dialogue Feature for Skits
Players can press the assigned button during Skits to speed through the character's dialogue.

Grade Shop Available During First Playthrough
The Grade Shop is now accessible during your first playthrough. Purchased effects are automatically set to On, and certain effects can be turned off by selecting the Grade Shop setting from the Options menu.
*Character Levels and other data transfer-related effects are not accessible during the player's first playthrough.

Player has 3190 Grade in disposal, which can be used to select the following. Effects purchased and the 3190 Grade available at the start of the first playthrough cannot be carried over to subsequent playthroughs.
Trade EXP for Gald 50 Exchange all of your EXP for half a gald each. For brave souls who want to win with skill alone. Double Experience 90 Earn twice the usual EXP in battle. You'll feel like you're making great progress! 5x Experience 400 Earn five times the usual EXP in battle. Get this and Double Experience and you'll really soar. Half Experience 10 Earn half the usual EXP in battle. In case you want to clear the game at a fairly low level. Double SP 200 Earn twice the usual SP in battle. For those who like learning skills. Triple SP 1000 Earn triple the usual SP in battle. For those who LOVE learning skills. Double Item Drops 120 Doubles the chances of receiving dropped items from enemies. For all you packrats out there. Dualize Discount 100 Reduces dualizing fees to 25% of their usual cost. But watch out: This makes it hard to earn stamps. Upgrade Eleth Mixer 50 Increases the odds that your Eleth Mixer will generate consumable items. Expand Inventory 100 Allows you to carry up to 30 of each consumable item. Maximum Speed 50 Maximize your field movement speed. But be ready for certain dishes to cook faster as well... Chain Capacity +1 30 Adds 1 CC to your base Chain Capacity. Not flashy, but certainly useful. Chain Capacity +2 250 Adds 2 CC to your base Chain Capacity. That'll come in mighty handy. Double Critical 30 Doubles the critical rate of friends and foes alike. For those who like to live dangerously. Double Damage 30 Doubles damage dealt by friends and foes alike. For those who prefer speedier battles. 5x Damage 150 Quintuples damage dealt by friends and foes alike. For those who want things over in a flash. Double Gald 70 Earn twice the usual amount of gald. For all the late-bloomers out there. Unlock Qualities 50 Allows for new qualities that weren't previously possible. This one's for old-school Tales fans. Maximum Eleth +500 100 Increases the maximum eleth capacity of the Eleth Mixer by 500. Maximum HP +1000 150 Begin the game with your maximum HP boosted by 1,000. (NEW!) Halved Shop Prices 160 Prices will be halved when purchasing items, weapons, armor, and other such things from shops.

Destination Icons
The next Main Story destination will be highlighted by an (!) icon. The distance remaining until you reach your destination will also be displayed. (Can be changed in the Options menu)

Adjusted Cursor Movement Speed (World Map Screen)
Pressing the assigned button while viewing the world map will cause the map's cursor to move faster.

Retry Feature for Regular Battles
If players are defeated in a Regular Battle, they can choose to try again.

Subtitles Available For Battle Scenes
Subtitles will be displayed when characters use their Mystic Artes during battle, as well as during any post-battle dialogue. The display settings for subtitles can be changed in the Options menu.

Players Are Informed of Newly Learned Artes
Newly learned Artes will be displayed in green.

Colorblind Vision Accessibility Adjustments
Color recognition is no longer required to overcome certain obstacles and puzzles in dungeons.

DLC from the Original Version Included
Much of the content found in the original game's DLC will be included.
*Not All Content will be Available
Some DLC content (mainly licensed content) has been excluded from this remaster.

Certain Skits Available in Multiple Languages
Certain skits in the original version’s DLC that were only available in Japanese will now be available in other languages and with English voice-over in the remastered version. For these additional scenes, please welcome Alexis Tipton as Cheria, as well as the rest of the returning cast.

Additional Volume Settings
All volume settings related to the in-game music, sound effects, voices, and animated cutscenes can be adjusted in the Options menu.

Adjusted sounds effects
Some sound effects were adjusted and improved.

Normally find increased run speed in re-releases of post-SNES games silly, but at the end of Vesperia it's really clear level could have been a third as long (In the "3 meters become 1 meter" sense) and it would have improved the game. Don't know about Graces F though.

Retry function in normal battles - Even if you end up losing in a normal battle and get a game over, you’ll be able to retry from that battle instead of needing to load up a save file.

So you can't really game over anymore?

It's not like you're invincible or anything, you still have to redo the battle. You just don't have to reload your save if everyone dies. Of course you're free to ignore that if you want.

whats the point of offering enough grade to break your first playthrough? will there not be a grade to unlock something like unknown to "maybe" make some of this worth it?

probably for people that already has finished the game on ps3 and don't want to need to finish it first.

Some of those options are nice, while others are basically, "you know you can watch this online, right ?".

It'd be nice if encounter can be toggle with just single button press instead of go to the menu, also I hope someone can mod the licensed costumes into the game as well.

Just a heads up but you could already skip skits, groovy chats and everything that existed in the game with a button, this is something Namco failed to remember with the ps3 version. The ps3 version also had a blinking blue cursor on the minimap on the hud showing you where to go to continue the story, sometimes it was inconsistent so i bet this will now be much better since it will also tell you how far you are to the next story point, the blinking blue cursor will now be an ! Btw...

I saw that it won't, you have to open the menu up and go to settings, I saw a video awhile back showing proof of this, this was a little bit of a letdown to me but that may have been a video before they implemented it who knows... I do know that when you are traveling in the game the l2 and r2 buttons are not used so this could easily be the buttons for both random battles and dash on and off.

I kinda wish they'd keep the grade shop locked till after you finish the base game, or at least start you at 0 grade and you can earn some as you go thru the game itself. The orignal game was never hard, no point in giving the grade shop early.

Then don't use it. I don't see why this is so hard for some people.
