Yes, cloaking will protect you from statues. I'm almost certain it doesn't matter whether they've seen you before or not, being cloaked is a solid defense.
Going further:
I suspect statues are deaf, ignoring all sound and working by sight alone. That's unconfirmed though -- I need to cloak and sprint past a statue while my stealth boots are off to make certain. My tests did confirm that once a statue "wakes up", it can see you turn your back even if you're behind it (eyes on the back of its head, so to speak, once it wakes). I believe the cloaking spell protects against this as well.
For the price of 10 artifacts for (I think) 6 seconds of cloaking, you can stay perma-cloaked for 1 minute per 100 artifacts. I recommend more strategic use of the spell, but for all intents and purposes it can really trivialize bypassing those statues. This is especially so given how much cash a fastidious or hoarding player can accumulate. ;)
Sneaking, strategic cloaking, and a medkit for emergencies -- that is my main survival technique for book 2. And that's when I'm exploring it wall to wall, instead of just shortcutting my way to the end.
