The main goal with statues is don't let them tag you if you can help it. It's worth noting that they're deaf and sneaking probably does not affect their vision range at all, so if it makes it easier to maneuver, you can skip stealth. They're also blind behind and to the sides until they're awake; then their sight range and radius increases (360 degree vision, and a decently long range). I think my guide lists the actual values, which the dev kindly provided. Cloaking spell is a fine way to zip past them in a pinch.
Full vs empty fountains is entirely random. So no worries there.
So you're saying I don't have to crouch? But if you move too quickly don't they start to 'crumble'? Or will they not actually come alive unless you look away?

I don't think statues care about how fast you're moving. Someone may be able to correct me if I'm wrong here, but sprinting past a statue doesn't matter so long as you don't enter its cone of vision too closely (and it's not awake).
