If you want the authentic experience and not look at the UI, you only really need to remember five phrases:
Tageskarte (Day ticket)
Normal (Normal full-rate ticket)
Kurzstrecke (Short-trip full-rate ticket)
Ermäßigt (Reduced rate ticket)
Kurzstrecke ermäßigt (Short-trip reduced rate ticket)
Depending on the bus, you will have a ticket printing machine with the appropriate keys for each ticket type, or a lineup of tickets where you simply click on the ticket to hand it over to the passenger.
The cost of the ticket is displayed either on the ticket and/or the display of the ticket machine. Compare the ticket cost to the amount the passenger placed on the counter, then give change appropriately. Done.
