1) Start the game until you get a starting system with enough planets, and earth in the right position, save the game
2) Open the save game with a good text editor that keeps xml-format, e.g. notepad++
(in <username>\AppData\LocalLow\Zero Sum Games\StarDrive 2\SavedGames
3) Search for the planets (strg-f Sol I, Sol II, Sol III etc.)
4) Change the planets in the Sol system to fit your needs
(mooncount for moons (max 4), ResourceName (Gas_1, Barren_1, Toxic_1, Radiated_1) etc.)

There is a modifier called HasRings, but if i switch to true it still doesn't give Saturn its rings unfortunately
Well thats KINDA useful.. but i was aiming for something a little bit more permanent but thank you :)
