Why does everyone love arty? They have very poor accuracy. I've tried some arty designs but rocket spinal spamm ships always get better performance (normal difficulty)
Artillery has longer range then your spinal rockets, so some tend to have artillery in the big ships and have smaller ships use spinal rockets and most of the time, assuming they resist the ECM, most ships are dead before they even get within energy weapon range, i personally prefer energy cannons or beams, missiles and rockets from experience tends to get screwed over via ECM and my bigger ships tend to have 3-4 of them, its safe to say, the only weapons that impact my shields....are cannons or beams themselves.

10x Heavy Fighterbays and some Railguns to keep it as a Sniper back. It has some Armor and Shields but not as much as you want it with a Titan. Also some Phasors against other Fighters.
Order, those are some nice setups. Personally i haven't played many carrier builds, i usually prefer more direct damage setups. Before you got the death rays what do you build on your titans? I usually go Gauss and Mass Drives (love melting things before they reach me)
I like playing humans, but their ship designs are rather small. Vulfar also got this problem.
Yeah, most of the Time i go Gauss, i just like old school Ballistics until i get to the big Lasers. If i dont have the Gauss already i switch to Cruise Missles, devent Range and Speed for the Rockets, just spam it like hell and everyone gets killed.
About the Humans and Wulfar. Yeah their Ships are far too thin, you can manage to bring some Gauss / Rays on it but nothing really special, and Armor is bad to place there too. How is the Wulfar Titan? I remember from SD1 as it was patched in that it was really off place and wider / bigger then the standart "Space Subs" from the Wulfar. Is the Model the same or is it a new one?
Their design is long and thin, displaying a minimal target size to enemy ships from the front. And despite the small target profile, their front quadrant is also wide enough to protect the sides when being attacked from in front. This allows you to concentrate all your armor in one spot of likely impact, one panel behind the other, rather than being forced to cover multiple quadrants or a wider front section (which would give you less armor for the same space usage). A long front section is also ideal for giving you both thick armor while still giving you room for long, large weapon systems.
It is somewhat vulnerable to flanking, but typically this won't be a problem since only smaller ships will be fast enough to flank it if you have good engines and advanced (lighter weight) armor. Any ship small enough to flank it usually won't have enough firepower to breach the shields before side-mounted 180 degree turrets make short work of it.
