ONLINE CO-OP IS POSSIBLE
Hear me out. What you need to do is use Steam Remote Play Together with somebody else who has a steam account. It has worked with one other player, I haven't tested whether it works with three or four players.

If you're like me and never even heard of this function, here's how you do it.

1. Open the game.
2. Shift + Tab.
3. Select your friend's username.
4. Select Remote Play Together and wait for your friend to accept the invite.
5. You now share a keyboard. Enjoy.

I've done this to get a 4 player online game. It took us a bit of time to figure out how to assign controllers but it worked well.

This doesn't work on macOS Big Sur, I do not know how you download the 'gamepad installer software' but it doesn't let you on Mac can anyone help?

2nd this, my friends(3) and I got this working the other night with Remote Play and it worked well. It was really cool that only the "host" needed to own the game.
I just did this with 3 remote friends and myself. I was using keyboard, and my 3 friends were using controllers on their computers in different, remote locations. It took a second to figure out remote play, but after we did it was really smooth...with like 3 exceptions. we found that if you manage to start getting lag, pausing the game, opening the steam overlay for like 5 seconds, then resuming fixed the problem. It worked really well once we figured out how to do it!

That's not true online co-op, and has also been possible before steam remote play using software like parsec, which in my experience has worked better than steam and can also work with no steam games.
if you have a ♥♥♥♥♥ upload speed, it's also impossible to host. I have 200mbs down and only 5 mbs up and can't host.

It's better than nothing but not ideal for a lot of people.

When I try this using only controllers, it insists that player 2 use a keyboard. It also seems to ignore all input from guest players' controllers, even though the Remote Play screen shows them all using controllers... is there a troubleshooting guide?

Have you tried assigning controllers in the controller options menu?
