All the romance possibilities in that game are female and there is some story development related to the romances. Still not as much as you'd get in a VN, but there is at least progression showing them becoming interested in each other and CGs to unlock.
But yes, in this game Elodie is bisexual and under pressure to produce an heir and that's generally part of how the story plays out. Things will be quite different in Galaxy Princess Zorana. Different story, different pressures!

Marriage is about 5% of the game, but in that regard its very much in line with the historical truth of medieval Europe: lesbians & gay men 100% existed, but were still pressured to have blood-related heirs as babies and marriages were the only ways to pass property in that era.
You can actively aid at least to lesbian nobles in getting out of it, but as Elodie is about to be a queen? She needs to literally be infertile to get away with it. It's also why actually marrying any lady love is dang near impossible
Though Elodie does get away with ♥♥♥♥♥♥♥ off to who know's where & coming back pregnant and saying 'what father, who cares, its an heir. fight me.' and waltzing into the metaphorical sunset with her wife-in-all-but-name.
If you need this to be a game where lesbians can be modern lesbians instead of historical lesbians. No its probably not for you? (Cute Bite on the other hand has literally no men in the cast, let alone male love interests)
The one Brin ending you mentioned is clear that Elodie is just married to Brin. She doesn't have any male partners.
In almost any other situation it will be implied that Elodie at least takes a male lover in order to have children.
However, it's not always specified, and certainly not always specified whether there are feelings involved or not. I'm sorry, it's just really hard for me to answer because I have no idea how many endings you could attempt to interpret in that direction if you really tried.
The entire text related to that situation is:
"Both women did marry in time, but they never gave up their affection for each other."
That's all the game says. There is no canon saying whether they touch their husbands or not. Did they fall in love with men and marry them? Did they marry men to have heirs? Did they marry men for alliance reasons and then not sleep with them? It's not specified in the game.
