Does progression carry over from the demo?

Will the achievements up to that point automatically be unlocked when the game fully releases if we continue with our save files from the demo?

There are no achievements in the demo portion as far as I'm aware, but any progression toward them will carry over. I'll start a new save anyway because my goldfish memory.

Actually it does though. I googled and found out last time on PS5 you can get those achievements after importing your save. I guess it will be the same on PC as well.

Same here, most likely will start a new one. But I'm wondering though, will there any special achievements or items that we will get by importing from the demo. Because some Square's games did that like Bravely series etc.
I have finished both the demo and eikonic challenge though. my corncern is should I import it or should I start a new one.

Yes it gives you the opportunity to save for a final time after you complete the demo. That will carry over
