You'd be surprised how many bonus arrows they'll give you, so the old stutter shot which loses one arrow is still definitely a valid tactic. It's been a long time since I played/beat Gauntlet II on Hardcore, so I have forgotten most of what I did to cheese the flood of aimbots.
One thing I do remember though is that if an archer spawns in one of those little corner areas, you can carefully dodge-stall atop him when he's about to spawn to stomp him on the first frame he appears. Assuming you're bolting around the stage with hyper jumps, you can move between spawn points quickly enough to safely take out quite a few of the enemies.
If I remember correctly, this even works if the archer has a shield: since AI archers don't get invincibility time and you're crammed between him and the ceiling, you just bounce on him again one frame later. I might be wrong on that though. Either way, an unshielded archer is better than a shielded one, right? (Not really, as the shield is easy to remove -- since they can't catch arrows they don't even bother avoiding your shots and just let their shield pop.)
One other thing is that if you do get to a huge arrow disadvantage (enemy archers picking up your arrows) it's imperative that you let them shoot those arrows out of their inventories before you kill them. This can be accomplished by hovering around the edge of their aiming radius and then dodging/canceling out of the way of all the arrows they fire.
