What do with fish?
Do they have any use or just sell them (non-bait ones ofc)? By fish I mean ones you catch that have the fishie icon, not items with the ingredient icon.

Some are cooking ingredients. But mostly they're just for giggles and filling out the fishing book.

Fish give you

1: Other fish for using as bait. (you can see them as options when fishing) . There is a certain fish called the Pearl Glass which you can catch in fishing spots with those big leaves and it is needed for a side quest so if you can try to catch it early just to get it out of the way.

2: Ingrideants.

3: Sepith (and a lot of them too with certain fish like 100 time sepith)

4: Healing items (even something as useful as a celestial balm)

5: Accessories (and not just the basic ones too , you can get crimson eye and tiger heart in Ruan for example which are really late game accessories. )

In the second last chapter you get to fish "the guardian" and if you do, you get the fishing guild emblem (or a badge I don't know basicaly you are a part of them now) which lets you buy bait from the fishing guild in Grancel.

Note that every fish has different rewards depending on their sizes. The wikia does a perfect job at telling where the fish can be caught with what bait and which size give you which reward.

I didn't understand your question clearly so I thought might as well give you a semi-detailed information about the fishing in the game. Trust me there is a lot to fishing with where to get which fishing rods and what not.

Thanks for the info, not quite what I was looking for though. What I meant was after you've fished something up (and got whatever it spits out), the fish itself is put in your inventory. Some of these are bait, but a lot aren't. Is there any use for ones not listed as bait (you mentioned Pearl Glass, but any others?), either as ingredients or for quests etc? Or can I safely sell others that aren't labeled bait, like octopus for example?

Except for a single Pearlglass you can sell the other fish that cannot be used as bait. They don't serve any purpose. Some of them are worth a good amount of Mira.

Now that I think about it I never sold my fish.......hmmm perhaps in the future runs.

Oh here's a secret in case you don't know. (a bonus from me)
In the second last chapter go to Grancel before doing your main quest of that chapter. If you remember there was a villa with "on sale" sigh on it. Well now you can enter it and you can buy sepith there. Who does the villa belong to? Well lets not spoil it but here's a hint. In the first game this person mentions about having a villa in grance that he can offer.
