EA Yomi, MA Shinuyama, LA Jomon.
I think Ermor is basically Rome.
The Roman ones are usually called Ermor or Pythium. The Samurai one has different names in different ages, I think it's Yomi, Jomon, and Shinuyma (this one is definitely spelled wrong)
Early age Ermor is very Roman, and you have Arcoscephale in the early age too, which has a classical Greece flavour. Middle age Ermor is Rome if the Romans starting worshipping a death cult and all turned into undead (I'm have a suspicion this is the developers' humorous reference to Rome adopting Christianity. It is a death cult after all). Pythium is influenced by Roman mystery cults.
Note that MA Ermor is very weird and doesn't play like normal nations.

Berytos is fantasy Phoenicia/Carthage.
Ulm is essentially the Germanic tribes.
Marverni as heavily inspired by classical-era celts/Britons.

Oh! There’s also Therodoros, which is essentially “what if legendary Atlantians turned to ghosts when Atlantis sank?”
Middle Age Shinuyama is the Japanese Goblin faction, full of different Yokai summons. A lot of stealthy little buggers and good heavy infantry. Lots of magic diversity too.
Late Age Jomon is the 'true' Samurai faction, with plenty of humans ranging from warrior monks, Ninjas, priests and Shikigami-summoning Onmyodo. A crapton of 'national' summons too including shapeshifting animals and various Kami. You also get Dragon Kings and shark warriors from underwater forts.
As for the Roman Empire, the closest would be Early Age Ermor. It's also present in the Middle Age, but got several breakaway factions due to things going very wrong when they got too cuddly with Death magic.
EA Ermor is a composite of the middle republic and high empire, with Hastati, Principe and Triarii existing alongside a new very not-christian faith. It's the patriarch of the Ermor clan, dabbles in death magic that will eventually destroy it. It still has the native mages from before the saint worshipping, death magic practicing people took over outside forts. Its big stompy footprints are all over later ages since it's lore-wise extremely successful
MA Ermor is the result of EA Ermor doing too much death magic. It's a skeleton army with a roman theme. Very unique gameplay, everyone will mob you in multiplayer. Also has a big lore footprint being one of the defining features of the age.
MA Pythium and Sceleria are the byzantine brothers. Pythium went into therugy, the magic of angels extremely hard while Sceleria chose to reign back death but try to keep the positive balanced with the negative. Since Ermor exploded without experiencing military reforms, Pythium and Sceleria use the same Hastati, Principe and Triarii. They use big communions of astral mages to do death/astral things or heavenly things.
LA Pythium survives long enough to morph into the late empire after the crisis of the 3rd century, but has managed to flip from being very christian to being pagan in the process, becoming a perfect mirror to EA Ermor. They have recruit-anywhere heavily equipped 'Limitani' militia, Comitatense field armies and sacred Hydras.
LA Lemuria is the Scelerians getting their own MA Ermor, becoming Ghost Romans instead of Skeleton Romans by thinking they'd learned from Ermor's mistakes.
