In terms of stability Dominons 6 has been through a beta test, but I think it is reasonable to assume it will have more bugs than Dominions 5, being a newly released game. These bugs will very unlikely be game crashing or game ending bugs though, more likely to be minor issues that the developers will patch over the coming weeks.
Illwinter (the developer) have a very good track record of supporting and updating their games with free content (e.g. Dominions 5 had 7 new nations added after it launched, as well as new spells, heroes, and units).
If you are not sure about the price or very worried about bugs, Dominions 5 is still a fine game, but it is not likely to receive ongoing support by modders or the multiplayer community for long now that Dominions 6 has launched.
If you buy even 4 it would still give you great gaming time. Dom 5 was best of all so I am looking forward playing 6 while finishing up my games (SP) in 5 (I got hooked on excellent warhammer mod).
