Stages have equipment to get if you purify all of the... whatever they are, small trees or so.
You see that a number pop up (like 2/5).
If you get all of them, you can claim the equipment.
A stage has up to 3 side quests.
The boss stage in the demo only has one (defeating him in one minute or less).
Other stages have more specific things, and you only see what you needed to do after you are done with the mission... at least I didn't find a way to check while in a level.
If you miss any of threse things above, you can replay stages, and they reward you with collectibles or upgrade material for your classes.
But it's one time only, so no endless grinding.
The only things you can sorta grind for are:
- healing items
- orbs to purify the path and to change a peasant into a fighting unit (or change their class into another one
You can hold a max of 10 healing items and, I think, 500 orbs.
Any leftover you've had in the previous stage gets taken over to the next stage.
In the stage itself, you can have as much orbs and healing items as you want, but if you win and go into the next stage, it gets reduced to their maximum cap.
So if you end a stage with 5 healing items and 100 orbs or so, you can try a random stage again, try to stock up on healing items till you have at least 10 and try to end the level with around 500 orbs left, so you get a head start into the next stage.

Better clarity since I worded the ending kinda badly.
You can hold as many orbs and healing items as you want in a stage, you can go above your 10 healing items, and the numbers at the top also notify you wahen you are over the limit.
But out of all the stuff you've collected, you are only allowed to take 10 healing items and 500 orbs into the next stage.
If you have more, the number gets reduced to that cap.
If you have less while ending a stage, you won't get filled up to the cap.
Correct.
Every permanent stuff that helps you (which is equipment and upgrade materials for your units) is a one-time only reward.
If you got everything in a stage, you won't get more, and there is no experience to grind.
Plus, I think it's also sometimes better to not grind out a mission if you fail to reach a reqirement, since it's easier after getting a few upgrades.
Like the mentioned boss in one minute.
It might be possible in your first go, but after fighting that thing, there was no way for me to try this again without getting stronger first.
