I also recommend going for angel rooms instead because they generally have less bad items than devil deals. If you ignore the first devil deal completely (don't even go in the room) then the next angel/devil room generation is guaranteed to be an angel room. However, if you feel like trying your luck with devil deals then go ahead, they can still have great items in. But generally characters with strong offensive capabilities will benefit more from angel rooms since they usually have less health as a trade off. If you do decide to play maggie, then she's somebody you can take a lot of devil deals on.
But tanking is real with her and speed ups aren't rare.
With the current state of the game, mom's heart is possible to kill at any state. It's not like delirium or whole new beast fight.
