What they do?

When you lose the heart, you get a bunch of coins.

However, I think they are not actually hearts themselves. They sort of outline another heart and when that one is lost you get the coins. Something I find confusing because soul hearts and black hearts actually give a heart.

It also "shields" the heart, it surrounds, so when getting hit, the gold heart drops coins and gets depleted, but the heart it enclosed stays undamaged.

Does it protect the lost or the keeper "health"?

But Keeper can not meet any kind of heart.

Well, The Keeper can't pick up health. There are not even any heart drops when playing as him.
I have no idea, if it works on "The Lost" tho, but my guess is, that they just have no effect or you drop coins, but still die if getting hit (without Holy Mantle).
