"Pedestal items" is a generic term for active and passive items. Look carefully at items generated in treasure rooms or after killing a boss: they're not directly on the ground, there's a little rock-looking thing under them. That's the "pedestal".
Note that "pedestal items" also include items in devil deals or generated in chests, the presence of the pedestal itself isn't required. It's just a common term for "item" to better differentiate them from trinkets and pocket items.

To sum it up:
  • Pedestal items / items: things that typically spawn in treasure rooms, after boss fights, in devil/angel rooms, and so on. Either passives (you absorb them and they give an effect until end of the run or removed by some other effect) or active (top left corner, triggers an effect on use, usually reusable but must be recharged by clearing rooms or taking batteries). You can only have one active item at a time (unless some other effect changes that) and any number of passive items.
  • Trinkets: things that end up in the lower left corner. Can only have one at a time (unless some other effect changes that), usually gives a weaker passive effect than passive items.
  • Pocket items / consummable items: generic term for cards, pills, runes... Things that end up in the lower right corner. Can only hold one at a time (unless some other effect changes that), one-use effects.
  • Pickups: anything that drops directly on the ground. Includes trinkets and pocket items, but also bombs, coins, keys, hearts, sacks...
