The xbox reviews just say theres no safe transfer, nothing about how buggy it is.
Though maybe xbox reviews arent very reliable.
TL;DR: maybe, for you, the "bugs"/missing content won't show before they finally release the next big patch.
Edit: saw you don't have Isaac. Just go and buy it, best roguelite ever, full of risk/reward choices at every step of the way, full of OMG moments even at a new save game. I'm sure you won't reach incomplete content before they fix it.
Nice to play on console is that you'll be forced to play first without mods - IMHO, some mods are plain awesome (like External Items Descriptions) but they take the "exploration" enjoyment away from a new player - I played it almost 1000hrs on Vita, Switch, PS4, before returning to PC to play with mods.
Btw, "bug" that deletes save files while using Esau Jr, it was a lie, someone somewhere just posted it and it spread like a virus
Edit: yeah, players already confirmed that it has a small patch that we're waiting for

As I confirmed above, version for consoles is even better rn than for pc, it's not in an unplayable state for sure, nothing to worry about, have fun
And yes, mostly endgame is bugged, like new characters/items which comes mostly from the later parts of the game, if it's your first time playing isaac, you have a lot of things to do before you encounter them
