Why are Red Chests so worthless

In the original game they gave devil items, now they just spawn spiders

They can still give you items. And they gave you spiders before. Nothing was changed here.

red chest are still very powerful as they have a chance on dropping guppy items.
also the soul hearts they can drop are pretty big.

Also, the Red Chest pool is actually separate from the Devil Room one, along with the Curse Room and Devil Beggar pools that are all somewhat overlapping but distinct.

The times I've gotten guppy post repent is probably countable on one to two fingers. And the meta is angel deals now, not devil. Even just looking in that first devil deal punishes you WHEN IT WORKS CORRECTLY! by nerfing your 100% angel chance next floor.

The red chests can warp you to angel rooms too btw. And taking red chests items doesn't remove your angel room chance.

However, getting teleported into the devil room by red chests DOES count as entering a devil room for the purpose of whether your next devil room is guaranteed to be an angel room instead. Or at least it did when I used the Joker card on Basement 1, so it apparently checks whether you ever entered a devil room even if it wasn't on the actual second floor where you first have odds at all.
