what is the difference between normal and hard?
I am something new in this game and I see that many youtubers play on hard difficulty and I wonder the difference between the two difficulties

Most likely because some unlocks require to play on hard, so they basically do that right away to not have to do the game twice (normal then hard).

More champions enemy (more life, more damage...) faster attacks, more curses, bigger floors, and idk if something else.
The author of this thread has indicated that this post answers the original topic.

additionally, lower drop rates of red health, lower drop rates from destroyed objects especially soul hearts from fires, faster projectile speeds for traditional rebirth enemies.

The biggest noticable difference is the increase in champions and the amount of rooms there. However there's a lot of small things in there like paying the beggar 6 coins before you get anything from him. Yep it's best to replace your gameplay with hard to get the unlocks. The one time it might be better is for unlocking the Forgotten which less champions and rooms might be better for your run.

I've played hard mode a few times, but it seems like mostly all of the specific unlocks for it are just the co-op babies, except for the one item/achievement for getting all the checkmarks with all the characters. It doesn't seem that worth it except for hunting the 100 achievements you'd get.

Nah in normal you get nothing for the marks for each boss you defeat but in hard mode you unlock something for every mark. Not including tainted characters. The co-op babies are from Mega Satan btw. Achievements aren't generally only achievements in this game btw. Most achievements including unlocking things asides a few like the don't get hit on the specific floor achievements as an example. In regards there's very few reasons to play normal mode. One might be for an easier run to unlock the lost but that's probably about it that normal is worth staying on.

Wrong. Normal is enough for most unlocks, for all characters.

Only exceptions:
- Hard Heart
- Greedier mode (hard Greed)
- "All hard" unlocks.

Completely wrong.

the only 3 unlocks for hard mode are Mega Mush, Death Certificate and Godhead. Everything else is unlockable on normal.

Almost.
All regular characters have a hard unlock for killing Mom's Heart and another for getting all marks on hard. Most of those unlocks are coop babies though, but there are a few items.
