There are five levels of the shop afaik.
But you can still unlock a few items afterward. The last one is unlocked at 999.
There won't be any shop after that point so keeping your money is pointless.
There's the shop on blue womb and there are beggers/slot machines you can find or spawn as well as items that work with coins.
Still, my advice stands ! Donating as much as you can each run is, in my opinion, the best use of your money when you still have a long way to go in order to fill the machine.
I did it the same way, so I'd say you're probably right. I just wanted to point out, that you can do more with coins. Also when you're playing one of the harder characters and having a good run, it just might be more beneficial to keep your coins.
