for the Dedication achievement can I just start a daily then exit it right away?

The counter for Dedication goes up by one as soon as you start the daily. It wouldn't count past 1 at all otherwise.
Just "participating" is enough - how the run ends is irrelevant. I don't know, if a score of "0" will mess with the counter (when you exit or ALT+F4), so kill yourself or just do the daily, like any other run, to be on the safe side.

That's Marathon. For Marathon, you would need to get a win-streak of 5 for different daily runs. They don't have to be done in a row.
But it currently doesn't matter, because Marathon is bugged and cannot be unlocked.

Edit: To be clear, Dedication is "Participate in 31 daily runs in a row.".

damn, I started Marathon tonight by getting a daily run and was gonna try hard out to get the daily the next few days, guess I'll just wait a bit before trying to get that achievement
(I thought I may aswell get Marathon while I get Dedication since then the daily achievments are out the way then I can have fun messing with mods)

Er... if it is has to be a streak, it has to be in a row. That's what streak (a priori to make it unnecessarily technical) means in a game, sport or alike. Since this achievement is still bugged and information has yet to be made rather solid (ain't no one quote code, the devs or whatever official, huh?) we simply can not know if the wins must be in a row/in a streak or not.

By "don't have to be done in a row", i mean, unlike Dedication, you can skip/miss a daily run entirely. It should be pretty obvious, that starting a daily and losing/quitting breaks a streak.
